Location: Sottocastello vineyards in the village of Novello Position: facing south-east, Guyot pruning (6-8 buds) Vines/hectare: 4500

Yield in grapes: 6-7 t/ha

Year of planting: around 1970.

WINE-MAKING

Soft pressing with de-stemming, maceration on the skins for around 5-6 days at a maximum temperature of 25-27°C. The wine is then stored in stainless steel tanks, where it completes its malolactic fermentation prior to racking. Clarified using gelatine and bottled in April/May, it is then laid down for a brief period before being released. Alc. by vol.: 12-12.5% Total acidity: 5-6.5 g/l Dry extract: 23-25 g/l

 

TASTING PROPERTIES - CELLAR LIFE - PAIRINGS

Bright ruby-red with mauve highlights; delicate, fruity bouquet reminiscent at first of red and wild black cherries, and then - in the year following the harvest - riper fruit; dry, elegant, well-balanced flavour, round and lingering. Serve at 16-18°C; keep for a maximum of 2-3 years. Recommended with light hors-d'oeuvres, pasta with meat sauce, vegetable soup, poultry and roast white meat.
